Producers of this ancient and traditional spirit shouldn't need permission to call it mezcal, but unfortunately they do. And this permission comes at a cost that is much too high for many small producers. For those who try, this often means compromising on their traditions as they are required to adopt new and unfamiliar equipment, which results in a product of much less cultural value.

This is why we decide to sell our products as distilled agave spirits. We're dropping the word 'mezcal' so we can keep what it should represent - the culture! The batches that we source are true representations of traditional distillation processes, which in turn make a much truer spirit. This is the way our ancestors would've done it!
